Cooking Thursday


Thursday is almost here and that means it's time for another recipe. Sandra is hosting over at Diary of a SAHM, so go and visit her for more great recipe's!


This is a recipe I got from my mom. Whenever I take it to a potluck, I get asked for the recipe!

Japanese Chicken Salad
1 cup slivered almonds
2 cups cooked, cubed chicken
3 ounces Ramen noodles, chicken flavor (keep flavor packet for sauce)
2 chopped green onion
1 bag coleslaw mix
Put almonds in single layer on cookie sheet. Toast at 350 degrees for about 7 minutes or until lightly browned. Set aside and cool.
Put chicken in large bowl. Stir in coleslaw mix, crumbled noodles and onions.

Dressing
1 pkg noodle seasoning
1/2 cup oil
3 tablespoons vinegar
1 tablespoon sugar
1 teaspoon Accent
1/2 teaspoon salt
1/2 teaspoon black pepper
Combine all ingredients and pour over chicken and cabbage mix. Stir together to mix. Place in refrigerator overnight. Just before serving, sprinkle with almonds.

I make this as well but without the chicken. It's called a funi salad. I also add green onions. Yum! It's making me hungry just thinking about it.

I make this same recipe, but not with the chicken. What a great idea! We love, I mean LOVE this recipe and now I can make it as more of a meal with the chicken added.

I don't add the seasoning so we'll see if it's just as yummy with the chicken added "D

Oh, and I add red peppers to mine as well. Makes the look real pretty with the red in it.

I wish I had some of this right now, I love this salad!
I've never made it, just eaten it at get togehters when someone else makes it. I think it's about time I made it too!
