Today's recipe is for roasted carrots, with a brown sugar and cinnamon glaze. They're so good, and a nice way to change up how you serve carrots. I got this one from my sister Cheri and we really enjoyed them. Excuse the photo. I forgot to take a picture of the bowl full and had to get one of the few that were left. :)
Oven Roasted Glazed Carrots
1 1/2 pounds baby carrots, or regular carrots cut and quartered
1/ 4 cup butter, melted
1/3 cup brown sugar
1 teaspoon cinnamon
1/2 teaspoon salt
Preheat oven to 425 degrees.
Line a baking pan with parchment paper or foil for easy clean up.
In a large bowl, stir together the melted butter, brown sugar, cinnamon and salt.
Pat carrots dry and add them to the bowl, stirring until they are well coated.
Place carrots on prepared baking sheet and place in oven. Bake for 25 minutes, stirring halfway through cooking time.

ReplyDeleteI did an 1 pan dinner ... baked chicken breasts, quartered potatoes and baby carrots all in a yummy glaze. I love one pan meals...the clean up is a breeze.

ReplyDeleteOh yum! I LOVE carrots, and this is one of my favorite ways to cook them, although I don't necessarily do it in the oven. Sometimes I steam them until tender, and then drain off the water and add the butter and brown sugar and cinnamon if you wish (I don't always add that), and let them continue to cook in the pan on the stove until glazed. Or they can be cooked in the microwave too. I rarely use baby carrots, however. I prefer whole carrots quartered or sliced. I just think they taste better. But that's my personal opinion. Thank you for this reminder of a good side dish I need to do more often.
