Usually when I make a roast I cook it separately and have potatoes and veggies with it.
Last week I decided to make a pot roast in the crock pot. It's nice to have it all done with no last minute fuss!

Crock pot Pot Roast
1 beef roast
Kitchen Bouquet or other browning sauce
Small redskin potatoes, cleaned and halved
baby carrots
1 large onion, quartered
Place roast in crockpot and brush with browning sauce. Add water to bottom of crock pot, so there is about 1/2 inch in bottom. Cook on high for 6 hours.
Add potatoes and carrots - quantity of your choice. Add quartered onion. Cook on low for 4 hours or until veggies are tender.
Enjoy!
*I often start the roast the day before, cooking it for 2-3 hours. I then shorten the time a little the next day. I've found the longer it cooks the more tender the meat, and we like it to fall apart!

ReplyDeleteLooks good. We cook 80% of everything in the crock pot, especially beef roast and veggies. No mess, and one dish meals are the best.
