Happy March! I'm happy to have it here and am ready to be closer to Spring. :)
As usual, I'm sharing how I spent the first day of the month.
The morning started by going downstairs for a walk on the treadmill.
Then I had yogurt and fruit for breakfast and spent some time in my reading through the Bible in a year Bible, which I've been really enjoying.
Here's how things were looking outside my window. It was a cold day, 22 degrees outside but the sun was shining!
I cooked some eggs for bun spread I was going to be making. I've been doing this recently in the air fryer. It's quick and easy and the eggs always peel so nicely.
After the eggs were done, I started chopping veggies to make white chicken chili. Once the veggies were chopped and sauteed, they went in the crock pot with the other ingredients. On Sunday, I started it before we went to church and when we came home, it was all ready for us.Next up was making a deviled ham spread that used the eggs I cooked earlier. It goes on buns and they are broiled open face for a quick meal.
After that I tried something new. I had bought a bunch of parsley for chicken noodle soup I made earlier in the week. I saw something that said you could use your air fryer to dry herbs, so I thought I'd try it instead of letting them spoil. This is how they looked after putting them in the air fryer for about 3 minutes at 160 degrees.
Once they cooled, I removed the stems and was left with this nice dried parsley! I'll do more of this in the summer when I grow herbs.
I have to show you this pretty towel I was enjoying as I worked in the kitchen. It has the words of the old hymn - When Peace like a River, on it. My friend Dianna from Joyful in His Presence sent it to me last week! What a sweet surprise!
Once the cooking was done, I cleaned up the kitchen and we had a little lunch.
After lunch we drove to church and on the way, we saw these trees tapped for sap for making maple syrup. However, with the temperatures we're having the sap was frozen.
The reason we were at church was to print off a newsletter/magazine I put out every 2 months. It has information and pictures about things that have happened, a column by the pastor, news about people from our church, upcoming events and things like that. Bob came along to help and was standing here waiting for them to print out so we could get them put into the members church mailboxes.

When we got back home, we had a few quiet hours, then went back out and met some friends for supper at a Mexican restaurant. We had a yummy supper and a good time!
The rest of the evening was quiet, lighting a candle and watching a British Crime show. It was a good start to the month!
You were a busy girl from morning to night. I like that you walk the treadmill every day and start the day with devotions. And the food looked like a lot of steps but I bet it was worth it. You are still a bit on the chilly side. How nice you made that magazine for the church - I do that too! And nice to eat with friends and I love Mexican too.

ReplyDeleteHi Mari! What a nice day! You stay very busy even in retirement. I think I need to get an air fryer. That's neat that you do a church newsletter. I was in charge of our church newsletter years ago. Now everything is online. We just get a weekly email. I think I like having a paper copy better. Glad that March started well for you. I hope that the rest of the month is the same. See you again soon!

ReplyDeletePeace like a river is one of my favorite hymns. what a great idea to have mailboxes for memebers, no need to mail those newsletters. you were indeed a busy bee. I love March here in Florida but would love it more where you live. you have winter to deal with, we have summer to deal with. no wonder those who can afford it, have a home there and here

ReplyDeleteDrying herbs in the air fryer, what a good idea! I wonder if it would work with cilantro....love it fresh, but we seem to waste too much of it. Good for you getting on that treadmill! :). And, I love your kitchen, it's so bright and pretty.
ReplyDeleteYou have been busy while you bring in the month of March. Spring picks up and we come out of our hibernation state and life gets busier, don't it? I just want some ump to start being able to do things!
ReplyDeleteI love your kitchen and the colors. It looks like such a pleasant place to work. Yumm on the sandwiches and chili. I just hard boiled some eggs yesterday too for future sandwiches.

To end your day with supper with dear friends and then to snuggle down for the evening with a good mystery , sounds about perfect to me.

Mari, you always seem to squeeze so much into a day. You have a ton of energy my friend. I love that you put together a newsletter for church. That is amazing and I bet you enjoy the creativity of creating it!!
ReplyDeleteSounds and looks like a nice and productive day to start off the month of March. I have never thought to cook eggs or dry herbs in the air fryer. Glad to know it works well. I'll have to google how to go about doing the eggs as just today I felt like egg salad, but it seemed like too much effort to boil the eggs. :)

I don't have an air fryer, and am not sure if I would use one or not, but little by little I am hearing more and more about them so that I might have to consider it. I just didn't want one more little appliance to take up counter/pantry space, but if it is so useful, it might be worth it. I love the look of your church newsletter. That's a wonderful ministry! I love the printing room in your church too! Very organized and neat! I've worked in churches my whole adult life it seems, and I've never seen such a nice set up as that! Wow! Is your church very large? I enjoyed your post. The eggs and ham salad sound good. Although eggs are such a premium now I am trying to not use them any more than necessary, but I do love them. That white chicken chili sounds good too. I've never made that before. I bet you've probably shared the recipe. Maybe you could share it again sometime, or tell me where it can be found? Thank you. I'm trying to find more things to make with chicken and not use so much ground beef for things. But tonight we are having spaghetti. LOL. Have a great week.

ReplyDeleteBefore our church got merged and rearranged, we had someone who did a weekly typewritten (on an old typewriter) sheet of information and goings on at our church. I miss that.
ReplyDeleteYou amaze me with all the things you can get done in a days time. I'm gonna have to try the eggs in my air fryer..This would make me so happy for them to peel nicely. I usually begin cooking things in the morning too, sometimes even preparing several dishes to put in the refrigerator for the week.

ReplyDeleteI love using my air fryer to dry herbs! Its so nice in the summer so I don't waste any fresh garden herbs, I want to grow more this year to hopefully last me through the whole year. We will see :)

Always fun to see what another fellow "retired" person gets up to (as I basically am that for all intents and purposes, as I receive income from the companies I used to share with my ex). I've never tried doing the air fryer method for cooking eggs. I need to check that out. And I was planning to try to air fry my herbs from my gardening this year too! ReplyDeleteI didn't know you could boil eggs in the air fryer, or that you could dry herbs in it either. If it is so fast and makes them peel easier, I'd like to try it.

I admire your cleaning the kitchen when done. This is something that I'm still working on. Cleaning as I go and all that. And then trying to have the workbenches free of anything for the next morning. I don't always succeed.
