Cooking Thursday

 Do you have a panini press?  I really like mine.  It makes a sandwich classier and more of a meal.  It's something that's easy to make for a quick supper. I'm going to share one of my favorite panini sandwiches with one thing that I think just makes the sandwich.  If you don't have a panini press, no worries.  You can grill it like a grilled cheese, it's just not so easy to flip it.

Turkey Bacon Swiss Panini Sandwich
2 slices chiabotta bread
turkey slices
2 slices cooked bacon
swiss cheese
sliced tomato
mayonaisse
jarred pesto

Preheat panini press.  While it warms, butter the outside of the bread and set aside. Layer turkey, bacon, cheese and tomato in size of the bread and set aside. Take about 1 tablespoon mayonaisse and mix with a little of the jarred pesto and set aside. This is the item that elevates your sandwich to something special.  It adds so much flavor!
Lay one slice of bread on the press, butter side down.  Spread the mayo/pesto mix over the bread, then place the meat/cheese/tomato layers on it.  Place the other slice of bread on top, butter side out.  Close the press and cook until browned and the cheese is melted

    Used it so much, that we got tired of them.
