Brrr - it's been cold here! No snow, but temps in the 30-s and 40's. When Spring comes that will sound good, but right now I'm cold. So, that means it's time for soup! This recipe is one I got from an aunt, and was probably in Junior High, so I've been making it for a while. It's a simple soup, perfect for chili weather!
8 cups water
1 teaspoon salt
1 teaspoon Accent
1 pound ground beef in 1 inch balls
1 1/4 cup diced celery
1 cup chopped onion
1/2 cup uncooked rice
2 small potatoes, diced
1 can chopped tomato
1 bag frozen mixed vegetables
2 envelopes Lipton Beefy Onion soup
Bring water to boil. Add salt, accent and meat balls. Bring back to a rapid boil and skim off meat sediment. Add remaining ingredients and simmer for 2 hours.

ReplyDeleteMy hubby made that a couple of weeks ago. It is called Albondigas in Spanish. We add cumin and oregano and fresh chopped onion and garlic. We also get beef bones for the soup. Yours looks really good! I like the idea of frozen veggies. I chopped up all the veggies and my hubby did the rest. I am going to get a couple of bags of frozen veggies.

ReplyDeleteYummers! That used to be one of our Go To soups during cold months. Now that we're eating keto, Hubby makes a keto soup/chili that is heavenly. No carbs. I might ask for that tonight even though the temp's are unseasonably warm. I can crank up the A/C, put a fireplace video from YouTube on the TV, and bundle up. That would be fun!
