Red skin Potato Salad
2 pounds small red-skinned potatoes, quartered
1 pound bacon, cooked until crisp and crumbled
3 large eggs, hard boiled and cooled, then chopped
2 tablespoons red wine vinegar
3/4 to 1 cup mayonnaise
1 tablespoons mustard
6 green onions, finely chopped
1 small red onion, diced
1 tablespoon sugar
Salt and pepper, to taste
Boil potatoes until fork tender. Drain and let cool for about 10 minutes.
In a small bowl, stir together the vinegar, mayonnaise, mustard, green and red onions, sugar, salt and pepper.
Place the potatoes, eggs and bacon into a large bowl.
Stir mayo mix into potato mix and refrigerate.
Sounds absolutely scrumptious!!!
