Cooking Thursday

This week I made a new recipe that we really enjoyed  I know a lot of you use cast iron pans, but it's not something I've ever used.  This was my first attempt and I really liked it.  The dinner was tasty and the pan was so easy to clean!  I'm looking forward to using it more.
My picture didn't turn out very good - it tasted better than this looks!


Stove Top Steak and Potato Bites

1 pound sirloin steak, cut into 1" cubes
1 pound Yukon gold potatoes, thinly sliced
1 teaspoon fresh oregano, chopped
1 teaspoon fresh rosemary, chopped
1 teaspoon fresh thyme, chopped
salt and pepper to taste
3 teaspoons butter, divided
2 teaspoons olive oil

Heat cast iron pan on stove.  Add olive oil and 2 teaspoons butter.
Stir in potatoes and fresh herbs. Cook for about 7 minutes, flipping potatoes so they are cooked through.
Remove potatoes from the pan, add the remaining 1 teaspoon of butter.  Stir in steak cubes, season with salt and pepper and sear, then flip and sear again until meat is cooked.
Drain any extra juice from meat and stir in potatoes.  Sprinkle more fresh herbs over top before serving if desired.

  3. Your meal looks great! We have a cast iron pan and I think I will use it tomorrow. The kids want tacos and that pan gets the oil nice and hot! My friends say they are all gaining weight from the cooking. Looks like our Lifegroup will have to have walking meetings when this is all done!

  4. I love using iron skillets, in fact, those are the only skillets I have. They just make everything taste better. Your steak and potatoes sure looks delicious!

  10. I've started using gold potatoes too after talking to another customer in the grocery store back in Jan. My husband has been experimenting with new cauliflower and Brussels sprouts recipes. He did a cauliflower one with marinara sauce and parmesan and mozarella cheeses and a Brussels sprouts with a Kung Pao like sauce. Both were excellent.

  11. That sounds really good and looks amazing! I know it is something that Carroll will enjoy. I didn't grow up with cooking in iron cast cookware, but Carroll's mom always did so I followed suit. It has been almost 50 years now that I've been using them and love them!
