Cooking Thursday

It's still cold here!  As I write this (Tuesday night), another storm with ice and snow is predicted overnight and into the morning.  That means it's good weather for soup!  The recipe I'm sharing today is probably the easiest soup recipe ever.  If you have these ingredients on hand, you can have a big pot of soup ready in about 30 minutes!  I like to do it in the crockpot, but if you're in a hurry, you can just open cans and heat it up.  And - it's good!
PS - it may sound spicy with the taco seasoning and the green chilies, but it's really not.

Chicken Taco Soup
 
1 - 13 ounce can chicken or 1 cup diced, cooked chicken
1 - 11 ounce can diced tomatoes with chilies
1 - 28 ounce can diced tomatoes
1 - 4 ounce can green chilies
1 - 15 ounce can kidney beans
1 - 15 ounce can black beans (drained and rinsed)
1 - 11 ounce can corn
1 package taco seasoning
1 package ranch dressing mix
 
Put contents of all cans, including liquids in crock pot. The only exception is the black beans (drain them and then stir in with the rest).  Stir in taco seasoning and ranch dressing mix.  Heat on low for about 4 hours.
 
Serve with cheese and taco chips.  Yum!

  2. This sounds really good! I don't always have all those ingredients on hand but they are going on the grocery list. It isn't cold here (mid-80s) but soup is good any time!! Thanks!
