A productive day!

I have some vacation days I need to use up, and last week I had the opportunity to take one.  I didn't have anything planned so I had a stay at home and get things done day!  I love days like that, and they serve me well on days I end up working late.

Bobs work gave him a large turkey breast at Christmas and I hadn't used it.  So the night before, I made it for supper, but with only the two of us, we barely made a dent in it.  I diced the rest of it up in preparation for the next day.  Then I looked for some freezer meal recipes and made a grocery list.
The next morning, I started some laundry and then headed to the store to get the ingredients I needed.
I was soon back home and the meal prep was started!

I take my computer right into the kitchen to follow recipes.


 The stove was full with pasta boiling and a sauce simmering.



In the end, I had 8 meals made!  I had 3 pans of turkey enchiladas, 2 Curried Turkey Noodle Casserole, 2 Tuscan Pasta and 1 Turkey and Stuffing Casserole.   This will be a huge help in the coming weeks.  I'll share the recipes as we try them out.


I even had time to clean out a few kitchen cabinets.

  1. My husband loves to buy turkeys during holidays when they are less expensive. We store them in a stand up freezer in the utility room. He'll do the cooking and cleanup and, of course, I help. Bags of turkey throughout the year for sandwiches and salads!

    Oh...and I have to ask...is the cupboard you show in the last picture a top cabinet or a bottom cabinet?

YES! i love productive days like this, how wonderful you have your meals already, Since we are down to two now, I need to do the same, and I like you when following a recipe from the internet, I have my computer on the counter. Today I tried Trisha Yearwood's recipe for pork loin it was delicious and we had a lot left over, after talking with my daughter tonight and telling her what we had for dinner she hinted that they would be eating with us one night this week, so much for the freezer. ~wink~

  6. Every once in a while I have a catch-up day because of snow, but somehow I never spend it making meals ahead. Maybe because cooking is my regular job and I have other things to catch up on on those days. Back in the day I used to have monthly cooking days. I did something like that for Jeremy when he was a student at the Art Institute of Tampa, his favorite recipes from childhood. Later Mike asked him, "Does your mom put peas or green beans in every recipe??" We still joke about that to this day.

  10. I have a whole turkey in the freezer from the Thanksgiving sales (28¢ a pound!). Joe isn't crazy about turkey leftovers so I'm waiting for company to come... looking forward to your recipes! And yes, I love productive days like that!

  16. I admire the fact that you get so much done in one day. While you were making 8 meals, I was making one. It took me nearly all afternoon to make Cincinnati Chili! Chad really likes it so I guess it is worth it.

  18. Good grief! You should have your own channel on YouTube where you show yourself going about doing all these wonderful homey things. People would love it! You get more done in a day than I accomplish in a week! But then I am a lazy bum. Well-known fact, haaahaha xoxo
