BBQ Beef
2 cups shredded, cooked beef
1 cup ketchup
1/2 cup vinegar
4 tablespoons chopped onion
2 tablespoons Worcestershire sauce
4 teaspoons packed brown sugar
1 teaspoon mustard
1 teaspoon garlic powder
Heat all ingredients, except beef to boiling over medium heat, stirring constantly. Reduce heat and simmer for 15 minutes. Stir roast into sauce and serve on buns.

ReplyDeleteI agree that a roast is usually too large for two people. I often cut my roasts in half before freezing or I cut some into a smaller roast and the other part will be slices for stir fry. I haven't bought a roast for long though and I was just thinking of doing so this week. Your roast leftover dish looks absolutely scrumptious.
