Cooking Thursday

I don't make beef roasts a lot, but when I do it's always too much for just the two of us.  Sometimes we just make another meal of it, but today's recipe is one that I've made for years using leftover roast beef.  It's delicious!

BBQ Beef
2 cups shredded, cooked beef

1 cup ketchup

1/2 cup vinegar

4 tablespoons chopped onion
2 tablespoons Worcestershire sauce

4 teaspoons packed brown sugar

1 teaspoon mustard
1 teaspoon garlic powder
Heat all ingredients, except beef to boiling over medium heat, stirring constantly. Reduce heat and simmer for 15 minutes. Stir roast into sauce and serve on buns.

  3. I agree that a roast is usually too large for two people. I often cut my roasts in half before freezing or I cut some into a smaller roast and the other part will be slices for stir fry. I haven't bought a roast for long though and I was just thinking of doing so this week. Your roast leftover dish looks absolutely scrumptious.

  4. p.s. how do u shred your beef? Do you just break apart after long roasting or do you put it in the food processor?

  8. Mari, it's been a while but I'm blogging again. Drop over if you have the chance and see the photo of daughter's new house. Moving has progressed all week but the movers come tomorrow for the big furniture.

    This recipe sounds delicious. I'm going to give it a try. I don't cook beef often but this is the perfect solution for leftovers.
