Cooking Thursday

Last week I brought a meal to a family in our church who had a new baby.  I usually try to include cookies or bars along with a meal.  This time I included bars that everyone seems to love.  I think this may be a recipe that I have shared more than any other!  When my kids were younger and had to bring a snack, people would often ask if they would take this.  It's another oldie, that I remember my mom making when I was young.  They are chewy peanut butter bars with a chocolate topping and are so good!

Chocolate Scotcheroos

1 cup white sugar
1 cup white corn syrup
1 cup peanut butter
6 cups Rice Krispies
1 cup chocolate chips
1 cup butterscotch chips

Place sugar and corn syrup in a pan, stir to mix and place on stovetop.  Heat, stirring frequently until mixture barely begins to boil.  Stir in peanut butter, then stir in Rice Krispies.
Pour into a greased 9x13 pan and press into place.
Melt together chocolate and butterscotch chips.  Stir and pour over mixture in pan.
Place in refrigerator long even to cool and set chocolate topping.  Cut and served

  1. Peanut butter is my comfort food! I'm sure these bars taste heavenly. And from your instructions, it looks pretty simple to do too, without the need of an oven. Please take care! :)

  9. Oh my!! I used to print out so many of your recipes. When we were cleaning out to move, I had so many printed recipes that I didn't know what to do with them all...TWO 30-inch notebooks full and no sense to the filing. I sorted through and kept a few, but created a private board on Pinterest where I post any recipe that I really want to try. This one just went there! Thanks!

  13. They're a lot like the peanut butter rice krispie treats that I make all the time. Except I use marshmallows for the sweetening. And butter. I also like to add cheerios with the rice krispies. At the end I throw in some mini marshmallows, peanuts, and chocolate chips for some added texture and interest. My friends at Houserville call them my Rocky Road bars!
