Cooking Thursday

I made breakfast for supper the other night.  I made some blueberry muffins to go with it and thought I should share this recipe with you.  I love old recipes that have stood the test of time and this is one of them. It's the recipe my mom used when I still lived at home and that's been a lot of years!
It's almost as quick to stir up as a mix and it tastes so much better!

Mom's Blueberry Muffins
1 egg
1/2 cup milk
1/4 cup oil
1/2 teaspoon salt
2 teaspoons baking powder
1/2 cup sugar
1 1/2 cup flour
1 cup fresh blueberries (I used frozen and they turned out fine)
Beat egg slightly with fork.
Stir in milk and oil.
Add salt, baking powder, sugar and flour.
Stir in blueberries.
Bake 20-15 minutes at 400 degrees until they test done.
Makes 12 muffins

  1. We love blueberry muffins. I've never made them from scratch, so I appreciate you sharing your Mom's recipe. We buy frozen blueberries at Walmart and eat them on cereal or oatmeal, so I will definitely try these!

  3. Once again you have me drooling!!! I love blueberries...the fresh ones even more so. And Michigan has some of the best!!!

    Just look at those juices running over the muffin top. Oh my.

    Oh, and I like breakfast for dinner more than early in the morning.

  5. Easy and delicious is what I see! The best thing about "old" recipes is that we usually have all the necessary ingredients already in the cupboard. Thanks for sharing this!

  6. Mari, is that Self-raising flour or Plain flour? I know you use a different type of flour in the States. Any ideas?
