Cooking Thursday

The recipe I'm sharing today comes from my sister Terri.  She made a blueberry coffeecake for the shower we had a few weeks ago and it was so yummy!  I'm sure you'll like it too.

Blueberry Coffee Cake

4 tablespoons butter
4 ounces cream cheese
1 cup sugar
1 egg
1 cup flour
1 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon vanilla
2 cups fresh or frozen blueberries
2 tablespoons sugar
1 teaspoon cinnamon

Heat oven to 350 degrees.  Beat together butter and cream cheese until smooth.  Add 1 cup sugar, egg, flour, baking powder and salt, stir together and then add vanilla.
Fold in blueberries (if using frozen, do not thaw).
Pour into a greased 9x9 pan.
Mix together 2 tablespoons sugar with the cinnamon and pour over dough.
Bake for 1 hour.

  4. HI Mari! Be sure to thank your sister for me! My husband loves blueberries, and it's great that this recipe calls for fresh or frozen. Now a days, there aren't any fresh ones around!
