Today I'm sharing a recipe I got from the wife of one of my teachers, when I was in 9th grade. He was starting a strawberry farm (DeLanges, for those in the area). He asked a few of us to work for him, planting and weeding. Every day his wife would bring a snack out to the field for us, and this was one of them. The fact that I'm still making this, after all these years (since 1975) tells you this is a good one! I've had many people ask for this recipe - it's always liked!
Thank You Squares
1 cup butter
1 1/2 cup sugar
4 eggs
1 teaspoon almond flavoring
2 cups flour
1/4 teaspoon baking powder
1 can cherry pie filling (may use another flavor)
Cream together butter, sugar and eggs until light and fluffy. Stir in almond flavoring, flour and baking powder until well mixed.
Pour into greased 15x10 pan. Cut into 24 squares before baking.
Drop 1 tablespoon cherry pie filling in the center of each square. Bake
for 30 minutes at 350 degrees.
This is what they look like before they go into the oven. You can see the squares I cut into the batter before dropping the pie filling on.
Here's what they look like just out of the oven.
When cool, dust with powdered sugar and store in the refrigerator.
