Cooking Thursday


I think many of you have made the popular Eclair dessert, made using graham crackers. I saw a twist on it, using chocolate graham crackers and peanut butter and had to try it.

Peanut Butter Eclair Dessert


1 box chocolate graham crackers
2 (2 1/4 ounce) boxes instant vanilla pudding
1 cup peanut butter
3 1/2 cups milk
8 ounces thawed Cool Whip
Topping:
2 squares bakers chocolate, melted
3 tablespoons melted butter
2 tablespoons corn syrup
1 teaspoon vanilla
1 1/2 cup powdered sugar
3 tablespoons milk

Line bottom of 9x13 pan with crackers.
Mix together pudding with milk and peanut butter. Beat on medium speed for 2 minutes. Fold in whipped topping.
Pour 1/2 of pudding mix over graham crackers.
Place another layer of crackers over pudding mix.
Pour rest of pudding mix over crackers, then add one more layer of crackers.
Mix topping ingredients to spreading consistency and spread over crackers.
Refrigerate for at least 10 hours before serving.

  6. This looks delish. I tried a recipe off of Pinterest that had a pie crust bottom...it wasn't good at all. I will have to give this a try!

  9. I am making an eclair cake for christmas as usual but this year I am trying it made with eggnog in the mix instead of milk. Hoping it turns out tasty.
