I tried out a new recipe last week that we really liked. It has several things that I like in a recipe:
It's easy to make, it's economical, it makes extra that can be frozen and it tastes good!

Cheesy, Beefy Goulash
1 lb box elbow macaroni, cooked and drained as directed on box
2 pounds ground beef, cooked and drained
2 tablespoons vegetable oil
2 cups chopped green pepper
2 cups chopped onion
1 tablespoon chopped garlic
1 can cream of mushroom soup
1 - 15 oz can tomato sauce
3 cups canned crushed tomatoes (the crushed type helps keep this dish moist)
1 teaspoon basil
1 teaspoon oregano
1 teaspoon cumin
salt and pepper to taste
4 cups grated cheddar cheese
Heat oil in skillet, add green pepper, onion and garlic. Saute until soft. Add cooked ground beef. Add mushroom soup, tomato sauce and tomatoes, then stir in seasoning. Add 2 cups cheese.
Divide between 2 - 9x13 pans. Sprinkle remaining cheese over top of both dishes.
Cover one tightly with foil and freeze. Bake the other one at 350 degrees for 25-30 minutes until cheese is lightly browned and bubbly.
To make the frozen pan, thaw and bake at 350 degrees for about 45 minutes.

Great idea! Sounds so much like a casserole I used to bake all the time when hubby and I were first married and we loved it!

ReplyDeleteI like the food but dislike the name. Why not call it dinner for the stars or something.? I like stew but the name isn't as bad as Goulash. Where does that come from?
