Cooking Thursday


It's Cooking Thursday, hosted by Sandra at Diary of a SAHM. Be sure to stop over at her place to see what other recipes people are sharing.

I am sharing a recipe that is probably the easiest one I've ever posted. Not only is it easy - it's yummy and it's a relatively low cal chocolate fix.
Don't be afraid of the pumpkin - you don't even taste it; just fudgy chocolate!


Weight Watchers Chocolate Muffins

1 box Devils Food cake mix
1 can (15 ounce) solid pack pumpkin

Mix together. Do not add any other ingredients. The mixture will be very thick and you will be tempted to add something to thin it, but don't!
Place in muffin tins, sprayed with non-stick spray or with liners.
Bake at 400 degrees for 20 minutes.
This makes 12 muffins
Each muffin is 180 calories, 2.5 grams fat, 37 carbs, 2.5 grams fiber, 2.5 grams protein.

*I made this into 18 muffins instead. They were still good sized and cut the calorie count.

  4. This is something I still make frequently, and they are so good. all you taste is yummy chocolate, not pumpkin at all..delish!

  8. Oh.My.Word! If only I could reach through my computer screen and grab one!!!!!!! That and a cup of cold milk would be heaven. Thanks for a low cal treat. Hmmmm...who will eat the 11 others though?? I'm afraid if I make 12, I'll eat 12. I'm saving the recipe though for when someone is here to help me.

    Just a little question, solid pack pumpkin, is that like pie filling? I just ask because I live in Norway and sometimes it isn't so easy to find the ingredients we have at home!:)

  10. I've made chocolate zucchini muffins before and they were the tastiest, richest, fudgiest muffins I've ever had. I bet these are just as good...so moist they melt in your mouth, right?

  19. I've always loved this recipe! I add 1/2 bag of chocolate chips too... YUMMY!!! We've also made it with different kinds of cake mix. White cake mix is one of our favorites!

    I decided to try these today as an after school snack for me and the boys. I gotta tell you, I was skeptical. But, WOW, you were right!! They are really good. And, really filling!!!

    Thank you for sharing this recipe! (I like Diane's idea above - maybe I'll try some other cake mixes and play around with it - maybe a spice cake mix with white chocolate chips.)

    Gonna keep pumpkin in the house! :)
