It's Thursday


Almost every Thursday I post a recipe or two. These are usually on Slow Cooking Thursday hosted by Sandra at Diary of a SAHM, but she is visiting family in Africa this month. For several weeks this month Megan from Fried Okra has hosted a recipe exchange on Thursday so that continued the theme. This week I don't think there is anyone so I decided to just share a few recipes that are family favorites. Hope you like them too!

This is an easy recipe and the sauce tastes like what you get when you order a wet burrito in a restaurant.
Wet Burritos
1 pound hamburg, browned and drained
1 pkg burrito seasoning
1 can refried beans
1 pkg (8) flour tortillas
8 ounces shredded cheddar cheese
lettuce, tomatoes
Sauce
1/2 of burrito mix
8 ounce tomato sauce
1 jar brown gravy
1/2 cup water

Stir beans and 1/2 of burrito mix into browned hamburg. In separate pan heat all of sauce ingredients. Fill tortillas with meat, lettuce and tomatoes to taste. Wrap and place folded side down. Top with sauce and cheese. Bake at 350 degrees until cheese is melted, about 20 minutes.

This recipe came from a cook at the Nursing home where I work. Everyone always loved her chicken so I got the recipe and named it after her. She passed away a couple of years ago and it's nice to think of her when I make this.
Roxanne's Chicken
1/2 cup cornflake crumbs
1/2 cup flour
1/2 cup Parmesan cheese
2 teaspoons salt
1/2 teaspoon pepper
1/2 teaspoon garlic
1 teaspoon oregano
1 teaspoon basil
1/2 teaspoon rosemary
sprinkle of accent

Mix all ingredients in a plastic bag. Take desired pieces of boneless, skinless chicken breast and trim fat from them. (I cut them in half if they are large) Place pieces, one at a time in bag and cover in coating. Place on greased cookie sheet and bake @ 375 degrees for 35 minutes.
