Cooking Thursday

Today's recipe is one I tried over Christmas, for a breakfast dish made in the crockpot. You turn it on before you go to bed and in the morning it's all ready for you!  Hash browns, bacon, cheese, green pepper, onion and eggs - it was very good.




Overnight Breakfast Casserole

6-8 strips of bacon, cooked until crispy and chopped
1 green pepper, diced
1 small onion, diced
1 - 2 pound bag frozen southern style hash browns
1 1/2 cups shredded cheddar cheese
12 eggs
1 cup milk
1 teaspoon salt
1/2 teaspoon pepper

Spray crock pot with non stick spray.
Saute green pepper and onion for 5 minutes.
Place 1/3 of hash browns in the bottom of the crock pot, then layer 1/3 of bacon, 1/3 of the peppers and onion,  and 1/3 of cheese. 
Repeat layers two more times, ending with the cheese.
Stir together the eggs, milk, salt and pepper and pour over cheese in crock pot.
If making this ahead of time, you can put the crock pot in the refrigerator until bedtime.
Cook on low for 8-10 hours.

  8. I would fix this for dinner. We love having " breakfast for dinner" A couple times a month because we don't normally have big breakfasts. I have never seen southern style hash Brown's in the stores so would regular or frozen potatoes O'Brien work?
