Cooking Thursday

Here's a quick recipe I re-discovered at Christmas.  If you want a quick and easy treat, this is a good one!

No Bake Avalanche Cookies

2 cups Rice Krispies
1 cup mini marshmallows
1 cup creamy peanut butter
16 ounces white chocolate - can use a bar or chips.

Line baking sheet with parchment paper or waxed paper.
Stir together marshmallows and Rice Krispies in a large bowl.
Melt peanut butter and white chocolate together.
Stir into Rice Krispy mix.
Drop by tablespoon onto baking sheet.
Place in refrigerator until set.

I'm sitting here thinking, hmmmm, I have all those ingredients except the white chocolate. But I do have regular chocolate chips. Hmmm. But it's 10 PM.....
