Slow Cooking Thursday






I love soup when it's cold outside, and it's getting cold!  Here's a good soup recipe for these cold winter nights.

Classic Minestrone Soup
2 cans (14.5 ounce) chicken broth
1 can (15 ounce) red kidney beans, rinsed and drained
1 can (15 ounce) cannellini beans, rinsed and drained
2 cans (14.5 ounce) diced tomatoes
6 carrots, peeled and thinly sliced
3/4 teaspoon dried Italian seasoning
12 ounces rotini pasta
1 pkg. (10 ounce) frozen spinach, thawed and squeezed dry

Place broth, beans, tomatoes, carrots and seasoning in 4 quart or larger slow cooker.  Stir to combine.
Cover and cook for 6 to 8 hours on low.
Cook pasta as directed on package.  Add pasta and spinach to cooker and stir to combine.  Cover and cook 15-20 minutes more, until heated through.

Mmmmmmmmmmm, I love soup too. Even when it's "Hot" outside. It's a healthy dish, and it's easy to make....this recipe, Mari, is awesome.

Hi Mari,
I will be stocking you for recipes, now that it’s getting colder. I was talking with a nice gal in the check out line yesterday, visiting from Grand Rapids. Hard to believe we still haven’t had any snow yet, my hubby says it’s because he bought a new snow blower!
